We are currently seeking a highly motivated and experienced hospitality professional to join our team at the Americus Hotel as an Executive Chef who can help lead the property to sustainable success. This hotel in the heart of downtown Allentown, PA was built in the early 1900s and has recently undergone a full restoration to preserve its charm.

Responsibilities:

The Executive Chef is responsible for all aspects of managing and leading the kitchen and kitchen personnel, ensuring the quality preparation of all menu items and proper handling/storage of all food items in accordance with standards. Coordinates the purchase of all food and menu development while maintaining approved food and labor costs, to include monthly inventories to verify budgeted food costs will be maintained.

Manage and direct a diverse crew of culinary professionals.
Hire, coach, train and direct all culinary staff members.

Job Requirements:

To perform this job successfully an individual must be able to perform each essential job duty satisfactorily.

Four years’ experience as an Executive Chef or Executive Sous.
Proven track record of team management, organizational and coaching skills within the Heart-of-the House.
Solid understanding of a la carte and banquet revenue generation.
Comprehensive knowledge of expense control as it relates to BOH payroll and the forecasting/budgeting of expenses.
Experience with purchasing and inventory systems.
Creative menu development skills.
Strong technical literacy, including Microsoft Word and Excel, payroll management and point of sale systems.
Diplomatic team player able to foster relationships with employees and guests.

The Executive Housekeeper is responsible for the daily operation of the Housekeeping Department necessary to maintain guest rooms and public areas to the highest standards.

JOB RESPONSIBILITIES

Supervises housekeeping and laundry staff: hiring, terminating, performance evaluations, training, and development.
Assists general manager in the development of the department’s annual budget. Monitors performance against plan.
Establishes and maintains cost control systems for staffing, inventories (linen, terry, OS&E and cleaning supplies).
Enforces policies and procedures.

Works with finance to conducts formal inventories of linen, supplies and equipment as required.
Orders and receives supplies so as to maintain adequate inventory levels.
Checks all vacant rooms and spaces, public spaces, storage areas and rest areas each day.
Maintains departmental key control.
Maintains deep cleaning program.
Acts as Manager on Duty as required.
Conducts monthly department meetings.
Attends weekly staff meetings.
Complete projects as directed by management.

JOB REQUIREMENTS

Over two year’s managerial experience in Housekeeping or a hospitality service-related field with high customer/client contact required.
